HOW MUCH WILL I NEED?
The good rule is for a WHOLE BIRD 1LB per person
WHEN CAN I PICK IT UP?
We need 3 days to process. So 3 days after you drop off.

THANKSGIVING WEEK
Sunday thru Tuesday 10 am til 8 pm
Wednesday 10 am til 7 pm
Thursday CLOSED
Friday 10 am til 8 pm
WHAT DO I DO WITH IT TIL I'M READY TO SERVE?
Keep it chilled and take it out a few hours before it's time to eat (keep it away from the dog!) and let come to room temperature.
HOW DO I REHEAT?
Our smoked turkey is at its best-served room temperature. Should you choose to warm, we suggest in the oven in a pan over a little water so it does not dry out.
WHAT CAN I DO WITH THE BONES AND CARCASS?
Do not give poultry bones to the dog, they splinter and could cause problems. We have a much better idea. Make some DELICIOUS smoked turkey stock perfect for soup or pho. If you don't have time right away... throw the bones in a ziplock in the freezer and bring them out when you have time. Simple Broth Recipe: Simply place the turkey carcass, garlic, vegetables (like an onion, carrots, celery), herbs (like parsley, rosemary, thyme), and peppercorns in a large, deep-bottomed pan. Add cold water to cover and bring to a boil, skim, then turn the heat down to a simmer. Continue to simmer gently for 3-4 hours, skimming as necessary, then pass the stock through a fine sieve.
